1. I'd suggest adopting Wikipedia style, avoiding excessive informality.
2. I suspect the key thing is to encourage lots of contributions - people can then tidy up the structure afterwards. Given we're most likely to get too few contributions, I don't think we need to worry about setting a structure too much. However it'd be good if someone created a skeleton structure of pages linking to other pages (including with links to pages that need adding, like we currently have). They coud then make the home page link to these high-level pages, which then direct to more specific articles.
